
Chocolate Banana Pudding (No Added Sugar + Vegan)
I say, throw them out the window! Then grab an avocado and a couple ripe bananas for this pudding. It tastes so yummy, even my boyfriend gobbled up his serving and asked for more! And normally, he isn’t a big fan of avocado treats.
It’s chocked full of healthy nutrients from the cocoa powder, bananas, avocado, (non-dairy) milk, and chia seeds. There is nothing in there that your nutritionist would steer you away from! The only devilish part is trying to stop yourself from eating it all.
For me, this is the perfect treat to sooth the soul as I treat a knee injury. It’s comforting, tasty, and healthy enough I don’t have to care about spending an entire Friday evening on the couch.
Note: yes, this pudding does taste banana-y. It’s like a chocolate banana pudding in terms of flavour. If you want a more subtle banana taste, I suggest using bananas that are less ripe (yellow with no black dots). Keep in mind there will be less natural sugars, so you might have to add a tablespoon or two of honey to taste.
Vegan Chocolate Banana Pudding
Ingredients:
– 3 large ripe bananas
– 1 medium ripe avocado
– 4-5 tbsp cocoa powder
– 1 cup non-dairy milk
– 2 tbsp chia seeds (optional- it’ll thicken it, but will also change the texture slightly)
Directions:
Add everything into a food processor and mix. Divide into bowls and garnish with grated coconut, cocoa nibs, fresh fruits, or anything else you’d like!
