Crunchy Beet and Feta Salad

If you are one of those many people who love sweet-savoury dishes, this side is for you! Not only is it this Crunchy Beet and Feta salad healthy and full of nutrients, but it’s also delicious and super easy to make. You will be finished making this salad in 15 minutes flat! And it will only take you half the time before you’re licking the bowl clean. Trust me on this one.

All you need to do is shred 1.5 raw beets. And then cut the other 1.5 beets into matchsticks. That’s the most time consuming part! And let’s be honest, that takes no time at all. The beets and feta is a classic combination, so I also added a touch of balsamic vinegar to retain that amazing purple colour and for a vinegary kick, and then I also added some garlic-infused oil from Favuzzi for a subtle warmth that balances the dish perfectly.

1. Mix together all ingredients. Season if necessary. Store in the fridge for a couple hours before serving to allow the flavours to mingle and get to know each other.
