
Crunchy Beet and Feta Salad
All you need to do is shred 1.5 raw beets. And then cut the other 1.5 beets into matchsticks. That’s the most time consuming part! And let’s be honest, that takes no time at all. The beets and feta is a classic combination, so I also added a touch of balsamic vinegar to retain that amazing purple colour and for a vinegary kick, and then I also added some garlic-infused oil from Favuzzi for a subtle warmth that balances the dish perfectly.
Crunchy Beet and Feta Salad
Ingredients:
– 3 medium sized beets, peeled and shredded or cut into match-sticks
– 1/4 cup chopped fresh parsley
– 1/4 cup crumbled feta
– 1 tbsp garlic oil
– 1 tbsp balsamic vinegar
– salt and pepper if desired
Directions:
1. Mix together all ingredients. Season if necessary. Store in the fridge for a couple hours before serving to allow the flavours to mingle and get to know each other.
