Jerk and Lime Popcorn

Tonight is the Super Bowl. If you’re a football fan, I’m sure you’ve been counting down the hours since you woke up this morning. You’re probably already wearing the jersey of your preferred team, you’ve got your game menu planned, and you know who is coming over to shout and cheer at the TV with you.

If you’re not a football fan, you probably have no idea what I’m talking about. Or perhaps you do, you’d just rather watch re-runs of The Mindy Project on Netflix.

But one thing is for certain: a fresh and new TV snack is always appreciated, especially if it is dead easy and “wow this is amazing” delicious.

This Jerk and Lime Popcorn literally takes ten minutes to make, and requires four ingredients: corn kernels, coconut oil, one lime, and jerk seasoning. That’s it. And you’ve got a killer TV snack just waiting to be devoured. I highly recommend eating it by the fistful.

Another plus? It pairs well with both beer and wine. Yup, even if the football match hasn’t even started, you’ve already won.


Jerk and Lime Popcorn


– 2 tbsp + 1 tbsp coconut oil, melted
– 1/4 cup corn kernels
– 2 tsp lime zest
– 2 tsp lime juice
– 1-2 tbsp jerk seasoning, such as Grace Foods Caribbean Traditions Jerk Seasoning


1. In a large pot heat 2 tbsp coconut oil over medium-high heat. Add 2-3 corn kernels and cover with a lid. Once those kernels pop, add the remaining corn and cover. Reduce heat to low, and leave it to pop the corn completely. You might have to shake the pot back and forth a bit to make sure it cooks evenly, but don’t take the lid off just yet (you might end up with a jumping kernel in your face). This will take about 3 minutes.
2. Pour the popped corn into a large bowl immediately so it doesn’t burn in the pot. Toss in the remaining 1 tbsp of coconut oil and the lime juice, then add the zest and jerk seasoning. Taste and adjust seasonings if needed. Serve immediately.
